Hasselback Sweet Potatoes With Honey Glaze

Ingredients

  • 2 medium sweet potatoes, scrubbed
  • 2 tbsp coconut oil
  • 2 tbsp honey
  • 1 tbsp iSpice WellnessTM Salad Seasoning*
  • 1 cup plain Greek yoghurt
  • 2 green onions, finely chopped

Directions

Step 1

Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.

Step 2

Slice the sweet potatoes in 1/8 of an inch increments 2/3 of the way through. Careful not to slice all through the potato.

Step 3

In a small bowl, mix together the coconut oil, honey and iSpice WellnessTM Salad Seasoning.*

Step 4

Rub the sweet potatoes with the honey mixture making sure to get the mixture into the cuts.

Step 5

Bake potatoes for 1 hour or until the skin is crispy and browned. At the halfway point, take the potatoes out of the oven and gently fan the potato slices out with a spoon or a fork.

Step 6

In a small bowl, mix together the yoghurt, green onions and seasoning.

Step 7

Serve potatoes hot with dipping sauce.
