Herb Crusted Pork Loin With White Wine Sauce

Herb Crusted Pork Loin With White Wine Sauce

Ingredients

  • 1 (4 lb.) boneless pork loin
  • 2 tbsp extra virgin olive oil
  • 5 French shallots, minced
  • 3 tbsp Dijon mustard
  • 4 tbsp iSpice WellnessTM Salad Seasoning*
  • 1/2 cup fresh Italian parsley, finely chopped
  • 1 1/2 tbsp butter
  • 1 shallot, minced
  • 1 1/2 tbsp all-purpose flour
  • 1/2 cup dry white wine
  • 2 tsp Dijon mustard
  • 2 cups low-sodium chicken stock
  • 1 tbsp iSpice WellnessTM Salad Seasoning*

Directions

Step 1

Preheat oven to 350 degrees Fahrenheit.

Step 2

Pat pork dry with paper towel.

Step 3

Heat a frying pan over high heat with 1 tbsp olive oil until almost smoking. Brown pork loin on all sides until very brown. Remove from frying pan and reserve.

Step 4

Combine 3 tbsp Dijon, 4 tbsp iSpice WellnessTM Salad Seasoning,* parsley, remaining olive oil and shallots in a small bowl. Lather the pork loin with mustard mixture, place on the rack in a roasting pan and roast approximately 1 hour until interior temp. reaches 145 degrees Fahrenheit.

Step 5

Transfer pork to a cutting board, cover loosely with aluminum foil and let it rest 20 minutes.

Step 6

While pork rests, heat butter in frying pan used for searing pork until frothy.

Step 7

Sweat shallots until translucent. Sprinkle flour over shallots and stir to combine.

Step 8

Whisk in white wine, reduce by half. Add mustard, chicken stock and iSpice WellnessTM Salad Seasoning.* Whisk to prevent lumps.

Step 9

Bring to a simmer and cook until sauce is thick.

Step 10

Slice the pork, serve with white wine sauce.
