Directions
Step 1
Preheat the oven to 375°F (190°C).
Step 2
Place the chicken breasts between two sheets of plastic wrap and pound them with a meat mallet until they are about 1/2 inch thick.
Step 3
Season the chicken breasts with salt and pepper.
Step 4
Set up three shallow bowls: one with the flour, one with the beaten eggs, and one with the breadcrumbs mixed with the grated Parmesan cheese.
Step 5
Dip each chicken breast into the flour, shaking off any excess. Then dip it into the beaten eggs, and finally coat it in the breadcrumb mixture, pressing the breadcrumbs onto the chicken to make sure they stick.
Step 6
Heat a large skillet over medium heat and add enough olive oil to cover the bottom of the skillet.
Step 7
Once the oil is hot, add the breaded chicken breasts to the skillet and cook until golden brown on both sides, about 3-4 minutes per side. You may need to cook the chicken in batches.
Step 8
Transfer the cooked chicken breasts to a baking dish.
Step 9
Spoon the marinara sauce over the chicken breasts, making sure to cover them completely.
Step 10
Sprinkle the shredded mozzarella cheese over the marinara sauce.
Step 11
Bake the chicken parmesan in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
Step 12
Remove the chicken parmesan from the oven and let it rest for a few minutes before serving.
Step 13
Serve the chicken parmesan with pasta, garlic bread, or a salad. Enjoy!
