Nasi Goreng, which translates to "fried rice" in Indonesian and Malay, is a flavorful and spicy fried rice dish that's a staple in Indonesian cuisine. Here’s a basic recipe for making Nasi Goreng:

Ingredients

For the Rice:

  1. Cooked rice - 3 cups (preferably cold, day-old rice works best)
  2. Chicken - 200g, diced (optional)
  3. Shrimp - 100g, peeled and deveined (optional)
  4. Eggs - 2, beaten
  5. Carrot - 1, finely diced
  6. Green beans - 1/2 cup, chopped
  7. Green onions - 2, sliced
  8. Garlic - 3 cloves, minced
  9. Shallots - 2, finely chopped
  10. Kecap Manis (sweet soy sauce) - 2 tbsp
  11. Soy sauce - 1 tbsp
  12. Sambal oelek or chili paste - 1 tsp (adjust to taste)
  13. Oil - for frying

Garnish (Optional):

  1. Fried onions
  2. Cucumber slices
  3. Tomato slices
  4. Lime wedges
  5. Prawn crackers

Instructions

  1. Prepare Ingredients:

    • If you’re using chicken and shrimp, season them lightly with salt and pepper.
  2. Cook Eggs:

    • Heat a small amount of oil in a wok or large frying pan. Pour in the beaten eggs and make a thin omelette. Once cooked, remove, slice into strips, and set aside.
  3. Stir-Fry the Protein:

    • In the same wok, add a bit more oil if needed, and stir-fry the chicken and shrimp until just cooked. Remove and set aside.
  4. Sauté Vegetables and Aromatics:

    • Add a little more oil to the wok. Sauté garlic, shallots, carrot, and green beans until they start to soften.
  5. Add Rice and Sauces:

    • Add the cooked rice to the wok with the vegetables. Break up any clumps of rice and stir well to combine.
    • Add kecap manis, soy sauce, and sambal oelek. Stir-fry the mixture, ensuring the rice is evenly coated with the sauces and ingredients are well mixed.
  6. Combine Everything:

    • Add the cooked chicken, shrimp, and sliced omelette to the rice. Mix well.
  7. Serve:

    • Serve the Nasi Goreng hot, garnished with fried onions, cucumber slices, tomato slices, lime wedges, and prawn crackers on the side.
