Directions
Step 1
Preheat oven to 425 degrees Fahrenheit. Grease 2 medium sized ramekins with cooking spray and set on a baking sheet.
Step 2
In a mixing bowl mix the egg yolks, sour cream, baking powder, cheese and iSpice WellnessTM Pork Seasoning* using a hand blender until completely combined.
Step 3
Whip egg whites until stiff but not dry. Gently fold half the egg whites into yolk mixture using a rubber spatula to lighten mixture before folding in the remaining egg whites. Fold until combined.
Step 4
Spoon egg mixture into prepared ramekins and bake for 15 minutes or until eggs are jiggly but set.
Step 5
Gently toss chives and arugula with lemon juice and oil.
Step 6
Serve omelets topped with arugula salad.
