Prepare the Pork Belly: Season the pork belly slices with a little salt and pepper.
Make the Ssamjang: In a small bowl, mix together doenjang, gochujang, minced garlic, sesame oil, sugar, chopped green onions, and sesame seeds if using. Set aside.
Grill the Pork Belly: Heat a grill pan over medium heat. Once hot, place the pork belly slices on the pan. Grill them until they are nicely browned and cooked through, turning them occasionally. This usually takes about 3-4 minutes on each side.
Prepare Accompaniments: While the pork is cooking, arrange the lettuce leaves, sliced garlic, green chili peppers, onions, and kimchi on a serving platter.
Serve: Once the pork belly is cooked, serve it immediately with the prepared ssamjang, lettuce leaves, and other accompaniments.
