Seared Scallops With Tomato Mango Salsa
Ingredients

1 lb. large fresh scallops, connector muscles removed

2 tsp extra virgin olive oil
- 2 tbsp iSpice WellnessTM Seafood Seasoning*

2 large ripe mangoes, peeled, seed removed & small dice
-
1 ripe avocado, peeled, seed removed & small dice

2 cups cherry tomatoes, quartered
-
1/4 cup red onion, small dice
-
1 jalapeno pepper, seeded & minced
-
1/2 cup fresh cilantro, roughly chopped

juice of two limes
-
hot sauce optional
Directions
Step 1
Heat oil in a non-stick pan over high heat. Toss scallops with iSpice WellnessTM Seafood Seasoning.*
Step 2
Sear scallops 2 minutes per side to form a brown crust.
Step 3
Meanwhile, gently fold together the ingredients for the salsa in a mixing bowl.
Step 4
Serve scallops warm on top of mango salsa with a drizzle of hot sauce if using.
