Directions
Step 1
Heat olive oil in a cast iron pan or a large pan. Cook the onions for 5 minutes over medium heat until lightly browned.
Step 2
Add carrots and bell peppers and cook 5 minutes.
Step 3
Pour in chopped tomatoes, water and iSpice WellnessTM Chicken Seasoning.* Cook 15 - 20 minutes over medium-low heat until thickened, stirring frequently.
Step 4
When tomato mixture is thick, use a spoon to create 4 deep wells in the mixture to accommodate 4 eggs
Step 5
Crack one egg per well, cover the pan and cook until egg whites are no longer runny, and yolks are just set, about 5 minutes
Step 6
Serve hot, sprinkled with fresh parsley with fresh crusty bread
Step 7
Add salt to taste.
