Shrimp and Veggie Skewers
Ingredients

10 large shrimps, peeled & deveined

1 small red onion

6 cherry tomatoes

6 white button mushrooms
-
1 small zucchini, sliced into 6 rounds

2 tbsp extra virgin olive oil

2 tbsp fresh lemon juice

2 tbsp iSpice World FlavorsTM Mediterranean Seasoning
Directions
Step 1
Toss shrimp with vegetables, olive oil, lemon juice and iSpice World FlavorsTM Mediterranean Seasoning.
Step 2
Soak 8 bamboo skewers in warm water for 10 minutes.
Step 3
Thread shrimp and vegetables in an alternating pattern
Step 4
Heat oven to 400 degrees Fahrenheit and line a tray with parchment paper.
Step 5
Roast skewers for 8-10 minutes until shrimp is pink all the way through.
Step 6
Serve skewers hot over a side of rice.
