Boil the Pork: In a large pot, bring the water to a boil. Add the pork and simmer until it starts to tenderize, about 30 to 40 minutes. Skim off any scum that rises to the surface.
Add Vegetables: Once the pork is tender, add the sliced onion, tomatoes, and tamarind soup base or natural tamarind pulp. Cook for a few minutes until the tomatoes are soft.
