Directions
Step 1
Rinse the sushi rice in cold water until the water runs clear. Drain the rice and place it in a medium saucepan with 1 1/4 cups of water. Bring to a boil over high heat.
Step 2
Once the water is boiling, reduce the heat to low and cover the saucepan with a tight-fitting lid. Cook for 15-20 minutes until the rice is tender and the water is absorbed.
Step 3
While the rice is cooking, mix together the rice vinegar, sugar, and salt in a small saucepan. Heat over low heat until the sugar and salt are dissolved.
Step 4
Once the rice is cooked, remove it from the heat and let it sit for 10 minutes. Then, transfer the rice to a large bowl and add the rice vinegar mixture. Stir gently until the rice is evenly coated with the mixture.
Step 5
Lay a sheet of nori on a sushi mat or a clean kitchen towel. Wet your hands with water and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top edge.
Step 6
Add your choice of fillings in a line across the center of the rice. Be careful not to overfill the sushi roll.
Step 7
Lift the bottom edge of the sushi mat or kitchen towel and roll it up and over the filling, tucking the edge of the nori underneath the filling. Roll the sushi mat or towel away from you, pressing gently as you go to create a tight roll.
Step 8
Once the roll is complete, press gently on the sushi mat or towel to seal the edges. Use a sharp knife to slice the sushi roll into bite-sized pieces.
Step 9
Serve with soy sauce and wasabi paste (if desired).
