Ingredients

  • 4 (6 oz) fillets cod
  • 1 tbsp iSpice World FlavorsTM Mediterranean Seasoning
  • 2 cups cherry tomatoes, quartered
  • 1 shallot, minced
  • 1/2 cup green olives, pitted & roughly chopped
  • 1/4 cup capers
  • 1/4 cup fresh basil, roughly chopped
  • 1/4 cup extra virgin olive oil
  • 1 tbsp red wine vinegar

Directions

Step 1

Preheat oven to 350 degrees Fahrenheit.

Step 2

Rub the cod with iSpice World FlavorsTM Mediterranean Seasoning and place in a baking dish.

Step 3

Combine tomatoes, shallot, olives, capers, basil, oil and vinegar in a small bowl and pour over fish.

Step 4

Bake for 20-30 minutes until fish is cooked through.

Step 5

Serve hot.
