Zucchini Puttanesca

Ingredients

  • 3 tbsp extra virgin olive oil
  • 6 large zucchinis, spiralized into noodles
  • 1 Spanish onion, finely chopped
  • 1/4 cup Spanish olives, pitted & chopped
  • 1/4 cup Kalamata olives, pitted & chopped
  • 1 cup cherry tomatoes, halved
  • 2 tbsp capers, chopped
  • 1 can tuna, drained
  • 3 cups tomato puree
  • 2 tbsp iSpice World FlavorsTM Mediterranean Seasoning
  • Parmesan cheese for serving

Directions

Step 1

Heat 2 tbsp olive oil in a large saucepan over high heat.

Step 2

Fry onions until starting to brown.

Step 3

Add olives, tomatoes and capers to onions and cook for 1 minute. Follow with tuna, breaking it up with a wooden spoon.

Step 4

Stir in the iSpice World FlavorsTM Mediterranean Seasoning and tomato puree. Bring to a simmer and cook for 10 minutes.

Step 5

In another frying pan, heat 1 tbsp olive oil over high heat. Fry zucchini noodles until starting to brown, about 5 minutes.

Step 6

Toss noodles with sauce and sprinkle with fresh parsley and parmesan cheese.

Step 7

Serve warm.
