The pasilla chile or chile negro is the dried form of the chilaca chili pepper. Because of its dark, wrinkled skin, pasilla literally means “little raisin.” It is a mild to medium-hot, rich-flavored chile that is tangy and aromatic and has chocolate notes. Pasilla chiles are mild on the pepper scale and are an important ingredient in sauces, especially mole and enchilada.Be on the lookout for poblanos to be mistakenly mislabeled as pasillas, and vice versa. The two peppers look nothing alike. The pasilla is a narrow, dried chili and a poblano is a fresh chili that can be nearly as wide as a bell pepper. Both are available widely online, but review carefully what you are buying as the two chilis have different taste profiles.
