Ingredients:
- 1 kg ground lamb or beef (or a mix of both)
- 1 large onion, grated and juice squeezed out
- 4 cloves garlic, minced
- 2 tablespoons red pepper flakes
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and black pepper to taste
- Fresh parsley, finely chopped
- 1/4 cup ice water (if needed to help bind the mixture)
- Vegetable oil, for brushing the grill

Prepare the Meat Mixture:
- In a large bowl, combine the ground meat, grated onion, garlic, red pepper flakes, paprika, cumin, coriander, salt, black pepper, and parsley. Mix well until the ingredients are fully integrated.
- If the mixture seems too dry, add a little ice water to help bind the ingredients.

Shape the Kebabs:
- Divide the meat mixture into equal portions. Mold each portion around metal skewers, forming a long, thin kebab about 1 inch in thickness.

Grill the Kebabs:
- Preheat the grill to high heat. Brush the grill with vegetable oil to prevent sticking.
- Place the skewers on the grill. Cook for about 4-5 minutes per side or until the meat is well browned and cooked through.

- Serve the kebabs hot off the grill with slices of red onion, fresh parsley, lemon wedges, and flatbread or rice.
