Adana Kebap - Spicy minced meat kebab on a skewer.

Adana Kebap - Spicy minced meat kebab on a skewer.

Ingredients:

  • 1 kg ground lamb or beef (or a mix of both)
  • 1 large onion, grated and juice squeezed out
  • 4 cloves garlic, minced
  • 2 tablespoons red pepper flakes
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and black pepper to taste
  • Fresh parsley, finely chopped
  • 1/4 cup ice water (if needed to help bind the mixture)
  • Vegetable oil, for brushing the grill

Directions:

  1. Prepare the Meat Mixture:

    • In a large bowl, combine the ground meat, grated onion, garlic, red pepper flakes, paprika, cumin, coriander, salt, black pepper, and parsley. Mix well until the ingredients are fully integrated.
    • If the mixture seems too dry, add a little ice water to help bind the ingredients.
  2. Shape the Kebabs:

    • Divide the meat mixture into equal portions. Mold each portion around metal skewers, forming a long, thin kebab about 1 inch in thickness.
  3. Grill the Kebabs:

    • Preheat the grill to high heat. Brush the grill with vegetable oil to prevent sticking.
    • Place the skewers on the grill. Cook for about 4-5 minutes per side or until the meat is well browned and cooked through.
  4. Serve:

    • Serve the kebabs hot off the grill with slices of red onion, fresh parsley, lemon wedges, and flatbread or rice.
