Step 1
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.

In a large bowl, beat the vegan butter and brown sugar until creamy.

Add the molasses, vanilla extract, and unsweetened applesauce to the butter mixture and beat until well combined.

Gradually stir in the flour mixture until a dough forms.

Roll the dough into balls, about 1 1/2 inches in diameter, and place them on the prepared baking sheet, leaving about 2 inches between each cookie.
Step 7
Bake for 10-12 minutes, until the edges are set but the centers are still soft.
Step 8
Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes.
Step 9
Transfer the cookies to a wire rack and let cool completely.
