Pumpkin Spice Low Carb Oatmeal recipe
Ingredients

1/2 cup almond milk

1/2 cup water

1/2 cup riced cauliflower

1/4 cup canned pumpkin puree

1/4 cup almond flour

2 tbsp chia seeds

1 tsp pumpkin pie spice

1/2 tsp vanilla extract

1-2 tbsp low carb sweetener (optional)

Toppings of your choice, such as chopped nuts, berries, or whipped cream
Directions
Step 1
In a small saucepan, combine the almond milk, water, and riced cauliflower. Bring to a boil over medium heat.
Step 2
Reduce the heat to low and stir in the pumpkin puree, almond flour, chia seeds, pumpkin pie spice, and vanilla extract. Cook for 5-7 minutes, stirring occasionally, until the mixture thickens to a porridge-like consistency.
Step 3
Taste the oatmeal and add low carb sweetener if desired.
Step 4
Divide the oatmeal between two bowls and top with your favorite toppings.
