Directions
Step 1
Bring water to the boil. Add quinoa with 2 tbsp iSpice World FlavorsTM Mediterranean Seasoning, stir well and turn heat to low. Cover and cook over low heat for 10 minutes until all liquid is all absorbed. Turn off heat, let quinoa stand, covered, for 10-15 minutes before fluffing with a fork. Let cool.
Step 2
Whisk lemon juice, vinegar, olive oil, mustard and remaining seasoning in a large salad bowl.
Step 3
Add vegetables and quinoa to bowl, fold into dressing until well mixed. Sprinkle with fresh parsley and feta cheese.
