Ingredients:
- 500g pork, cut into chunks
- 300g white corn (hominy)
- 200g white beans, soaked overnight
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tomatoes, diced
- 1 chorizo sausage, sliced
- 1 cup beef or chicken broth
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh green onions for garnish
Instructions:
- Prepare the Beans and Corn: Drain the soaked beans. In a large pot, combine the beans, corn, and enough water to cover. Bring to a boil, reduce heat, and simmer until both are tender, about 2 hours.
- Cook the Meat: In a separate pan, heat some oil over medium heat. Add the pork chunks and brown them on all sides. Set aside.
- Sauté Vegetables: In the same pan, add onion, garlic, and bell pepper. Cook until softened. Add diced tomatoes and cook until the mixture becomes saucy.
- Combine Ingredients: Add the sautéed vegetables, browned pork, and sliced chorizo to the pot with beans and corn. Pour in the broth, then season with paprika, cumin, salt, and pepper.
- Simmer: Let the stew simmer for at least another hour, or until all ingredients are tender and the flavors have melded together.
- Serve: Garnish with chopped green onions. Serve hot.
