Locro (Hearty stew with corn, beans, and meat)

Locro (Hearty stew with corn, beans, and meat)

Ingredients:

  • 500g pork, cut into chunks
  • 300g white corn (hominy)
  • 200g white beans, soaked overnight
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 tomatoes, diced
  • 1 chorizo sausage, sliced
  • 1 cup beef or chicken broth
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh green onions for garnish

Instructions:

  1. Prepare the Beans and Corn: Drain the soaked beans. In a large pot, combine the beans, corn, and enough water to cover. Bring to a boil, reduce heat, and simmer until both are tender, about 2 hours.
  2. Cook the Meat: In a separate pan, heat some oil over medium heat. Add the pork chunks and brown them on all sides. Set aside.
  3. Sauté Vegetables: In the same pan, add onion, garlic, and bell pepper. Cook until softened. Add diced tomatoes and cook until the mixture becomes saucy.
  4. Combine Ingredients: Add the sautéed vegetables, browned pork, and sliced chorizo to the pot with beans and corn. Pour in the broth, then season with paprika, cumin, salt, and pepper.
  5. Simmer: Let the stew simmer for at least another hour, or until all ingredients are tender and the flavors have melded together.
  6. Serve: Garnish with chopped green onions. Serve hot.
