Meatball and Potato Stew

Meatball and Potato Stew

Ingredients

For the meatballs:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the stew:

  • 2 tbsp olive oil
  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 4 medium potatoes (peeled and cubed)
  • 2 carrots (sliced)
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the meatballs:

    • In a large bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, paprika, salt, and pepper.
    • Form into small meatballs and set aside.
  2. Sear the meatballs:

    • Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides (they don’t need to be fully cooked). Remove and set aside.
  3. Cook the vegetables:

    • In the same pot, sauté the onion and garlic until fragrant.
    • Add potatoes and carrots, stirring to coat with the flavors.
  4. Simmer the stew:

    • Add diced tomatoes, beef broth, paprika, thyme, salt, and pepper.
    • Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add meatballs:

    • Return the meatballs to the pot and simmer for another 15 minutes, or until the meatballs are cooked through and the potatoes are tender.
  6. Serve:

    • Garnish with fresh parsley and serve warm.
