Ingredients
For the meatballs:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
For the stew:
- 2 tbsp olive oil
- 1 onion (diced)
- 3 garlic cloves (minced)
- 4 medium potatoes (peeled and cubed)
- 2 carrots (sliced)
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 tsp paprika
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley (chopped, for garnish)

Prepare the meatballs:
- In a large bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, paprika, salt, and pepper.
- Form into small meatballs and set aside.

Sear the meatballs:
- Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides (they don’t need to be fully cooked). Remove and set aside.

Cook the vegetables:
- In the same pot, sauté the onion and garlic until fragrant.
- Add potatoes and carrots, stirring to coat with the flavors.

Simmer the stew:
- Add diced tomatoes, beef broth, paprika, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.

Add meatballs:
- Return the meatballs to the pot and simmer for another 15 minutes, or until the meatballs are cooked through and the potatoes are tender.

- Garnish with fresh parsley and serve warm.
