Pumpkin Spice Baked Oatmeal

Pumpkin Spice Baked Oatmeal

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup chopped walnuts
  • 1/4 cup maple syrup or honey
  • 1 teaspoon pumpkin spice blend
  • 1 3/4 cups milk (or almond milk)
  • 1/2 cup canned pumpkin puree
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a baking dish.

Step 2

In a bowl, combine oats, chopped walnuts, pumpkin spice blend, and set aside.

Step 3

In another bowl, whisk together maple syrup (or honey), milk, pumpkin puree, and vanilla extract until well combined.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is well combined and the oats and walnuts are fully soaked in the liquid mixture.

Step 5

Pour the mixture into the prepared dish. Bake for 35-40 minutes or until set and golden brown.

Step 6

Let it cool for a few minutes, then slice and serve warm. Optionally, top with additional chopped walnuts and a drizzle of maple syrup.
