Chole Bhature Recipe

Chole Bhature is a popular North Indian dish, featuring spicy chickpeas (Chole) and deep-fried bread (Bhature). Here's a recipe to make it at home:

Ingredients

For Chole:

  1. Chickpeas - 1 cup, soaked overnight and drained.
  2. Onions - 1 large, finely chopped.
  3. Tomatoes - 2 medium, pureed.
  4. Garlic - 1 tsp, minced.
  5. Ginger - 1 tsp, grated.
  6. Green Chilies - 1-2, slit.
  7. Chole Masala - 2 tbsp (available at Indian stores).
  8. Cumin Seeds - 1 tsp.
  9. Turmeric Powder - ½ tsp.
  10. Coriander Powder - 1 tsp.
  11. Red Chili Powder - to taste.
  12. Garam Masala - ½ tsp.
  13. Salt - to taste.
  14. Oil - 2 tbsp.
  15. Water - for cooking.
  16. Fresh Coriander Leaves - for garnish.

For Bhature:

  1. All-purpose Flour (Maida) - 2 cups.
  2. Yogurt - ¼ cup.
  3. Baking Powder - ½ tsp.
  4. Sugar - 1 tsp.
  5. Salt - ½ tsp.
  6. Oil - for deep frying.
  7. Water - as needed to make dough.

Instructions

For Chole:

  1. Cook Chickpeas: In a pressure cooker, cook the soaked chickpeas with enough water until soft (about 4-5 whistles).
  2. Prepare Masala: Heat oil in a pan. Add cumin seeds. Once they splutter, add onions and fry until golden. Add ginger, garlic, green chilies, and sauté for a few minutes.
  3. Add Spices and Tomato: Add turmeric, coriander, red chili powder, and chole masala. Fry for a minute. Then add tomato puree and cook until oil separates.
  4. Combine with Chickpeas: Add cooked chickpeas along with some cooking water. Add salt and bring to a boil. Simmer for 10-15 minutes. Sprinkle garam masala and mix.
  5. Garnish and Serve: Garnish with chopped coriander leaves.

For Bhature:

  1. Make Dough: Mix all-purpose flour, yogurt, baking powder, sugar, and salt. Add water gradually to form a soft dough. Knead well. Cover and let it rest for about 2 hours.
  2. Shape and Fry Bhature: Heat oil in a deep pan. Take a small portion of dough, roll it into an oval or round shape. Deep fry in hot oil until puffed up and golden brown on both sides.
  3. Drain: Remove and drain on absorbent paper.

Serve the hot Bhature with the spicy Chole, accompanied by sliced onions, lemon wedges, and pickles for an authentic taste. Enjoy your homemade Chole Bhature!
