Ingredients
For Chole:

Chickpeas - 1 cup, soaked overnight and drained.

Onions - 1 large, finely chopped.

Garlic - 1 tsp, minced.

Green Chilies - 1-2, slit.

For Bhature:

All-purpose Flour (Maida) - 2 cups.

Yogurt - ¼ cup.

Baking Powder - ½ tsp.

Sugar - 1 tsp.

Salt - ½ tsp.

Oil - for deep frying.

Water - as needed to make dough.
Instructions
For Chole:

Cook Chickpeas: In a pressure cooker, cook the soaked chickpeas with enough water until soft (about 4-5 whistles).

Prepare Masala: Heat oil in a pan. Add cumin seeds. Once they splutter, add onions and fry until golden. Add ginger, garlic, green chilies, and sauté for a few minutes.

Add Spices and Tomato: Add turmeric, coriander, red chili powder, and chole masala. Fry for a minute. Then add tomato puree and cook until oil separates.

Combine with Chickpeas: Add cooked chickpeas along with some cooking water. Add salt and bring to a boil. Simmer for 10-15 minutes. Sprinkle garam masala and mix.

Garnish and Serve: Garnish with chopped coriander leaves.
For Bhature:

Make Dough: Mix all-purpose flour, yogurt, baking powder, sugar, and salt. Add water gradually to form a soft dough. Knead well. Cover and let it rest for about 2 hours.

Shape and Fry Bhature: Heat oil in a deep pan. Take a small portion of dough, roll it into an oval or round shape. Deep fry in hot oil until puffed up and golden brown on both sides.

Drain: Remove and drain on absorbent paper.
