Smoked Spatchcocked Turkey with Cajun Seasoning recipe

Ingredients

  • 1 whole turkey, about 12-14 pounds
  • 1/4 cup olive oil
  • 1/4 cup Cajun seasoning
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste

Directions

Step 1

Remove the turkey from its packaging and pat it dry with paper towels. Use a pair of kitchen shears to cut out the backbone of the turkey, then flip it over and press down on the breastbone to flatten the bird.

Step 2

In a small bowl, whisk together the olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, thyme, oregano, salt, and pepper.

Step 3

Rub the seasoning mixture all over the turkey, making sure to coat it evenly.

Step 4

Preheat your smoker to 225°F.

Step 5

Place the turkey, skin side up, on the smoker grate and close the lid.

Step 6

Smoke the turkey for 4-5 hours, or until the internal temperature of the thickest part of the meat reaches 165°F.

Step 7

Remove the turkey from the smoker and let it rest for 15-20 minutes before carving.
