Ingredients
For the sausage mix:
- 1 lb spicy sausage (sliced)
- 2 tbsp olive oil
- 1 large onion (sliced thinly)
- 2 cloves garlic (minced)
- 2 medium tomatoes (chopped)
- 1 tbsp tomato paste
- 2 tsp southwest seasoning
- 1/2 tsp paprika
- 1/4 tsp turmeric
- 1 green chili (sliced, optional for extra heat)
- Salt and black pepper to taste
For serving:
- Fresh cilantro (chopped, for garnish)
- Warm bread or rice (optional)

Prepare the sausage:
- Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned. Remove and set aside.

Cook the vegetables:
- In the same skillet, add sliced onions and sauté until softened and slightly golden.
- Stir in minced garlic and cook for 1 minute.

Make the sauce:
- Add chopped tomatoes, tomato paste, southwest seasoning, paprika, and turmeric to the skillet. Cook until the tomatoes break down and form a thick sauce, about 5–7 minutes.
- Add the sliced green chili (if using) and adjust salt and pepper to taste.

Combine:
- Return the cooked sausage to the skillet and toss to coat in the sauce.
- Simmer for 5–7 minutes to allow the flavors to meld.

- Garnish with fresh cilantro and serve hot with warm bread or rice.
