Spicy Sausage

Spicy Sausage

Ingredients

For the sausage mix:

  • 1 lb spicy sausage (sliced)
  • 2 tbsp olive oil
  • 1 large onion (sliced thinly)
  • 2 cloves garlic (minced)
  • 2 medium tomatoes (chopped)
  • 1 tbsp tomato paste
  • 2 tsp southwest seasoning
  • 1/2 tsp paprika
  • 1/4 tsp turmeric
  • 1 green chili (sliced, optional for extra heat)
  • Salt and black pepper to taste

For serving:

  • Fresh cilantro (chopped, for garnish)
  • Warm bread or rice (optional)

Instructions

  1. Prepare the sausage:

    • Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned. Remove and set aside.
  2. Cook the vegetables:

    • In the same skillet, add sliced onions and sauté until softened and slightly golden.
    • Stir in minced garlic and cook for 1 minute.
  3. Make the sauce:

    • Add chopped tomatoes, tomato paste, southwest seasoning, paprika, and turmeric to the skillet. Cook until the tomatoes break down and form a thick sauce, about 5–7 minutes.
    • Add the sliced green chili (if using) and adjust salt and pepper to taste.
  4. Combine:

    • Return the cooked sausage to the skillet and toss to coat in the sauce.
    • Simmer for 5–7 minutes to allow the flavors to meld.
  5. Serve:

    • Garnish with fresh cilantro and serve hot with warm bread or rice.
