Ingredients

  • 1 lb. fresh bay scallops, connector muscles removed
  • 1 1/2 cups fresh lime juice, divided
  • 1 medium onion, small dice
  • 2 ripe plum tomatoes, seeded & small dice
  • 1/2 cup fresh cilantro, roughly chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp orange juice
  • 3 tbsp iSpice World FlavorsTM Latin Seasoning
  • 2 celery stalks, small dice
  • 1 large (semi-ripe) Hass avocado, peeled, seeded & diced
  • Tortilla chips for serving

Directions

Step 1

Combine scallops, onion and lime juice (save 2 tbsp) in a bowl. Cover and let rest for 4 hours refrigerated until scallops are cooked. Drain the scallops and onions.

Step 2

Combine scallops, onions, tomato, cilantro, olive oil, orange juice, iSpice World FlavorsTM Latin Seasoning, celery and avocado with 2 tbsp lime juice. Gently fold ingredients together.

Step 3

Serve with tortilla chips and cold beer.
