Ingredients

  • 1 (5 oz) chicken breast
  • 2 tbsp iSpice World FlavorsTM Southwest Seasoning, divided
  • 1 head romaine lettuce, chopped (4 cups)
  • 1 tomato, fine dice
  • 1/2 cup low-fat shredded tex-mex cheese
  • 2 tbsp canned black olives, sliced
  • 2 green onions, chopped
  • handful corn tortillas, coarsely chopped
  • 3 tbsp low-fat Greek yogurt
  • juice and zest of one lime
  • 1/4 cup fresh cilantro, chopped

Directions

Step 1

Preheat oven to 375 degrees.

Step 2

Rub chicken with half the seasoning, bake in a dish for 20 minutes until cooked.

Step 3

Shred chicken, let cool.

Step 4

In a large bowl, lay down a bed of lettuce, topped with shredded chicken, tomatoes, olives and green onions.

Step 5

Mix together the remaining iSpice World FlavorsTM Southwest Seasoning, yogurt, lime juice and coriander. Drizzle over salad.

Step 6

Serve immediately.
