Goat Cheese Stuffed Chicken

Goat Cheese Stuffed Chicken

Ingredients

  • 4 (5 oz) chicken breasts, skinless & boneless
  • 1 cup goat cheese, goats cheese
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 2 tsp lemon zest
  • 3 tbsp iSpice WellnessTM Salad Seasoning*
  • 2 green onions, finely chopped
  • 2 tbsp extra virgin olive oil

Directions

Step 1

Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.

Step 2

Whisk together the goat cheese, egg, breadcrumbs, 2 tbsp iSpice WellnessTM Salad Seasoning,* lemon zest and green onions.

Step 3

Slice a 4" slit along the fatter side of each chicken breast. Using the tip of the knife, starting in the slit, carefully cut a deep pocket in each breast without cutting all the way through the chicken.

Step 4

Divide the cheese mix among each chicken breast, packing the stuffing in to the chicken as you go.

Step 5

Rub the chicken with olive oil, place on baking tray.

Step 6

Top each breast with a few thin slices of lemon, overlapping them slightly.

Step 7

Sprinkle with remaining seasoning and bake for 20-25 minutes until cooked through.

Step 8

Serve hot.
