Middle Eastern Vegetable Salad
Ingredients

1 red onion, small dice

5 plum tomatoes, seeded & small dice

1 English cucumber, seeded & small dice

1 (12 oz) can chickpeas, rinsed & drained

1 red bell pepper, seeded & small dice

1/3 cup fresh curly parsley, chopped

1/3 cup fresh mint leaves, chopped

1/3 cup fresh basil leaves, chopped

1 cup pomegranate seeds (optional)

1/2 cup fresh lemon juice
-
3 tbsp iSpice World FlavorsTM Middle Eastern Seasoning

1/2 cup extra virgin olive oil
Directions
Step 1
In the bottom of a large salad bowl, whisk together the lemon juice, iSpice World FlavorsTM Middle Eastern Seasoning and olive oil until combined.
Step 2
Toss salad ingredients in dressing.
Step 3
Serve at room temperature.
