Mushroom and Tofu Scramble
Ingredients

1 tsp canola oil

2 cup white button mushrooms, roughly chopped

1 16 oz package firm tofu, chopped

2 tbsp reduced-sodium soy sauce

3 cups baby spinach

1 tbsp iSpice WellnessTM Vegetable Seasoning*

2 green onions, finely chopped
Directions
Step 1
Heat oil in a medium frying pan over high heat.
Step 2
Pour chopped mushrooms into hot pan and stir-fry until mushrooms are golden brown.
Step 3
Add chopped tofu to mushrooms and cook over high heat for 5 minutes.
Step 4
Pour soy sauce into pan and stir to combine.
Step 5
Stir in baby spinach and iSpice WellnessTM Vegetable Seasoning,* cook until spinach is wilted.
Step 6
Serve hot sprinkled with green onions.
