Zaalouk Recipe

Zaalouk (Moroccan Eggplant and Tomato Salad) Recipe

Ingredients:

  • 2 medium eggplants
  • 3 ripe tomatoes, grated or finely chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder or to taste
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare the Eggplants:

    • Begin by roasting the eggplants. You can do this by pricking them with a fork and placing them under a broiler, on a grill, or directly on the flame of a gas stove. Turn them occasionally until the skin is charred and the inside is soft. This should take about 10-15 minutes.
  2. Peel and Mash:

    • Once the eggplants are cool enough to handle, peel off the charred skin and mash the soft flesh with a fork. Set aside.
  3. Cook the Tomato Mixture:

    • Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the grated tomatoes, paprika, cumin, chili powder, salt, and pepper. Cook the tomato mixture until it begins to thicken, about 10 minutes.
  4. Combine with Eggplant:

    • Add the mashed eggplant to the skillet with the tomato mixture. Stir well to combine.
  5. Simmer:

    • Continue to cook the mixture over low heat, stirring occasionally, for about 10-15 minutes, or until the flavors meld together and the mixture thickens to your desired consistency.
  6. Finish with Herbs and Lemon Juice:

    • Remove from heat and stir in the chopped cilantro, parsley, and lemon juice. Adjust the seasoning with more salt, pepper, or spices according to your taste.
  7. Serve:

    • Allow the Zaalouk to cool to room temperature before serving. It can also be refrigerated and served cold. Serve with a drizzle of olive oil on top and a side of warm, crusty bread for dipping.

Zaalouk can be enjoyed as a dip with pita bread, as a spread on sandwiches, or as a side dish with grilled meats and fish. Its versatility and depth of flavor make it a beloved addition to any meal, offering a taste of Moroccan cuisine that's both authentic and accessible.
